Great British Blog Off: Mexican Wedding Cookies

Can I have a drumroll, please?

It is officially Biscuits & Tea Time Treats time here in the entirely imaginary tent, and I never thought I’d be so glad to say farewell to cakes for a little while. With the disaster that was last week’s showstopper, I am happy to sit back at square one with a relatively simple recipe this week.

This chapter of the book is interesting because it’s a wide variety of things. This week is a cookie, next week is a tray bake, and after that we’ll be tackling homemade granola bars. After the parade of cakes, I welcome some time off from the ribbon stage.

As such, I approached this week with more enthusiasm than I’ve felt towards this project for quite some time. So let’s get on with it, shall we?

This Week’s Recipe: Mexican Wedding Cookies

I seem to have somehow forgotten to take my ingredients photo, so here is Azula being annoyed about me chopping nuts, instead!

The Prep

If it wasn’t for the fact that we were out of vanilla extract, I almost wouldn’t have needed a weekly shop for this bake at all. The recipe list is short and simple, as are the instructions.

Given that we were out of vanilla, I cheerfully made my way to Fresh Market and picked up a few other things while I was there, including a meal kit for a dinner of chicken Pad Thai.

I finished listening to Wine Girl during the drive, so it felt like I had already accomplished quite a bit when I arrived home with my bags and set about my bake.

The Bake

I confess I don’t have a ton to say about this week’s bake, except to say it felt very different from so many weeks of cake in all its forms.

This week, instead of a batter, I got to work with my first dough of the challenge. These Mexican Wedding Cookies are basically pecan shortbread cookies, consisting of butter, flour, vanilla, and pecans.

Once its all together, the dough chills in the fridge for a bit to become nice and firm so you can roll it out into neat little balls.

Each ball then gets a pecan pressed into the top–for aesthetics, I assume. I felt like I was spotting the cookies with little cockroaches, though, so I’m not sure this is quite my kind of garnish.

Per usual, my cookie balls were a bit too large, coming out with 14 cookies rather than 16, and they wouldn’t quite have won me any awards for even-ness.

They taste a bit less sweet that how I would personally prefer a cookie, but clearly they came out pretty good, considering that they’ve already been eaten between the two of us!

In all, a solid introduction to the new chapter of the book, and I’m eager to see how things go from here! `
